STUFFED BELL PEPPERS

ASSEMBLE:
- Mixing bowl
- Stove top pan/utensils/knife
- Baking dish 9″x13″
- Aluminum Foil
- Non stick spray
INGREDIENTS:
- 6 green peppers (.99 each/$5.98)
- 2 lb. ground turkey ($2.99/lb $5.98)
- 1 yellow onion chopped medium size (.50)
- 12 oz. cauliflower rice ($2.29)
- 1 bunch fresh spinach ($1.49)
- 1 can chicken broth 14 oz (.79)
- 1 Medium jar spaghetti sauce ($1.49)
- 2 eggs (.50)
DIRECTIONS
- Pre heat oven @ 375°
- Spray 9×13 baking dish and spread 1/2 jar spaghetti sauce on bottom of baking dish.
- Mix ground turkey & eggs in bowl and set aside.
IN A PAN:
- Sauté onions in olive oil until golden brown.
- Add ground turkey & eggs to the cooked onions.
- Then add chicken broth and simmer.
- Next add cauliflower rice and fresh spinach.
- Once the above mixture is cooked (The meat will be brown.), turn off the heat and set aside.
NEXT:
- Rinse and dry bell peppers.
- Cut them in 1/2 and remove seeds.
- Fill each bell pepper with the cooked ground turkey mixture.
- Lay them in the baking dish or pan on top of the layer of sauce.
- Place about a tablespoon of spaghetti sauce on each stuffed pepper.
- Cover with aluminum foil and bake for 1 hour.
