Yummy Stuffed Peppers

STUFFED BELL PEPPERS

ASSEMBLE:

  • Mixing bowl
  • Stove top pan/utensils/knife
  • Baking dish 9″x13″
  • Aluminum Foil
  • Non stick spray

INGREDIENTS:

  • 6 green peppers (.99 each/$5.98)
  • 2 lb. ground turkey ($2.99/lb $5.98)
  • 1 yellow onion chopped medium size  (.50)
  • 12 oz. cauliflower rice ($2.29)
  • 1 bunch fresh spinach ($1.49)
  • 1 can chicken broth 14 oz (.79)
  • 1 Medium jar spaghetti sauce ($1.49) 
  • 2 eggs (.50)

DIRECTIONS

  1. Pre heat oven @ 375°
  2. Spray 9×13 baking dish and spread 1/2 jar spaghetti sauce on bottom of baking dish.
  3. Mix ground turkey & eggs in bowl and set aside.

IN A PAN:

  1. Sauté onions in olive oil until golden brown.
  2. Add ground turkey & eggs to the cooked onions.
  3. Then add chicken broth and simmer.
  4. Next add cauliflower rice and fresh spinach.
  5. Once the above mixture is cooked (The meat will be brown.), turn off the heat and set aside.

NEXT:

  1. Rinse and dry bell peppers.
  2. Cut them in 1/2 and remove seeds.
  3. Fill each bell pepper with the cooked ground turkey mixture.
  4. Lay them in the baking dish or pan on top of the layer of sauce.
  5. Place about a tablespoon of spaghetti sauce on each stuffed pepper.
  6. Cover with aluminum foil and bake for 1 hour.
