TRY A HEALTHY SPIN ON A SIDE DISH- CAULIFLOWER FRIED RICE

Like many of you, I come from a blended family! My dad is a “dyed in the wool” Texan and my mom is Filipino. Both of these backgrounds influence our meals. From both sides of the family, rice has been a staple in our diets. But a few years ago we made a conscious decision as a family to shift our focus to making healthier diet choices because of diabetes and heart related conditions as well as obesity on both sides of our family history. I promise, it was not easy to leave our beloved white rice behind, but we decided to give cauliflower rice a try. Another change that we consciously made was to shift away from using so much butter and substitute olive oil. I hope you enjoy our spin on fried rice because our family loves it.

Cauliflower Fried Rice

Preparation & cooking time: 10 minutes
ASSEMBLE:
- Large skillet or pan
- Heat source (stove top or hot plate)
- Large mixing tool
- Measuring spoons
- Ingredients
INGREDIENTS:
DIRECTIONS:
- In a large skillet, sauté butter garlic and chopped onions (medium-high heat)
- Add frozen peas & carrots.
- Cook this mix 1-2 minutes.
- Then add frozen riced cauliflower.
- Cook 1-2 additional minutes.
- Crack the eggs on top of the cooked veggie mix.
- Mix all the ingredients together.
- Stir fry until all ingredients are cooked.
- Add a pinch of salt & pepper. (optional)
*For a healthier choice, substitute olive oil for butter.
