PASTA WITH FETA AND MORE: A MEATLESS MEAL!

ASSEMBLE:
- Cutting surface & knife
- 2-3 small bowls or plates
- Large 6 quart pot w/lid
- Skillet
- Strainer/strategy to strain the pasta
- Paper towels or dish towel
- Large spoons or ladles
- Measuring spoons/cup
INGREDIENTS:
- 1 lb pasta of choice ($1.00)
- 1 block of feta cheese 8 oz. ($5.99)
- 1 can of drained white beans 15.5 oz ($1.69)
- 2 cups cherry tomatoes – cut in halves ($5.49 for 24 oz.)
- 1 handful fresh basil or more if desired ($3.99 for 3 oz.)
- 2 cloves crushed garlic or more to your desire (1 bulb of fresh garlic .50)
- 1 cup of reserved pasta water
- 1/4 cup olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
DIRECTIONS:
- In a large pot, bring 4-6 quarts of water to a boil.
- Add pasta carefully to avoid splashing.
- Cook for about 11 mins or until pasta has softened.
- Set aside 1 cup of pasta water.
- Drain the pasta well and set aside.
- Strain the beans and set aside.
NEXT:
- Rinse basil & dry with paper towel.
- Cut the basil into pieces. Set aside.
- Crush the garlic into small pieces.
- Cut the tomatoes into halves.
- In a skillet, sauté crushed garlic in olive oil and until it is golden brown.
- Add tomatoes, white beans, salt & pepper and stir.
- Add the reserved 1 cup of pasta water.
- Finally, add block of feta.
- Cut it into quarters.
- Sauté all ingredients together while continuing to stir.
- Carefully add cooked pasta to skillet mixture.
- Stir all together and sauté.
- Top it off with the fresh chopped basil.
