Roasted Pumpkin Seeds
One large pumpkin: $5
Here is a great opportunity to have fun with the traditional activity of pumpkin carving and creating a healthy snack. All ages can get involved with this wonderful sensory activity! Oh, the sounds, smells and the feels!
Adults manage the carving, kids do the design, and everyone digs into the pumpkin to scoop out the pulp and seeds. Kids love squishing that slimy pulp through their fingers!
And what a plus to have such a wonderfully nutritional snack to savor!

ASSEMBLE:
- Heat source
- Baking sheet
- Bowl for serving
- Cutting implement
- Strainer or colander
- Paper towels/kitchen towel
- Parchment paper (optional)
- Ingredients
INGREDIENTS:
- Large pumpkin ($5)
- Olive oil (pantry)
- Salt/Pepper (pantry)
IDEA: Experiment with flavors; cinnamon, turmeric, cayenne, savory!

DIRECTIONS:
- Carefully remove the top section of the pumpkin.
- Scoop out seeds.
- Remove pulp/strings from seeds.
- Rinse seeds, pat dry and remove as much moisture as possible.
- Place seeds on a non stick baking sheet with parchment paper (optional) Spread out as much as possible.
- Drizzle the dried seeds with olive oil.
- Sprinkle the seeds with salt & pepper.
- Bake @ 325° for 15 minutes or until the seeds are golden brown.
Cool and enjoy!
