Here’s another budget friendly meal: Spicy Pork & Rice Bowl

We are all feeling the crunch of higher prices at the grocery store. My goal is to keep sharing budget friendly recipes that my family and I actually  prepare and enjoy.  Fresh veggies, locally sourced if possible, are included in this prep. My family likes a little “heat,” so feel free to sub your own preferred hot sauce that matches your family’s palate.

Spicy Pork & Rice Bowl

TOTAL: $12.70   A little over $3 per serving!

ASSEMBLE:

  • Heat source
  • Sharp knife/cutting surface
  • Skillet w/lid
  • Measuring spoons/cups
  • Can opener
  • Bowls for veggies/sausage/herbs
  • Serving bowls/spoon for scooping
  • Ingredients

INGREDIENTS:

  • 2 red bell peppers ($2.00)
  • 1 medium onion ($.50)
  • 2 ripe Roma tomatoes ($.60)
  • Cilantro ($.50)
  • 1/2 lb. Italian sausage with no casing ($3.15)
  • 1 c  White rice ($.37)
  • 6 oz tomato paste ($.79)
  • 3 c vegetable broth ($1.79)
  • 1/2 c shredded Monterey Jack cheese ($1.40)
  • 1/2 c sour cream ($.50)
  • 4 Tbsp Tapatio hot sauce ($.38)
  • 2 Tbsp Cajun seasoning ($.72)

FIVE REASONS TO EAT BELL PEPPERS!

DIRECTIONS:

  1. Rinse vegetables.
  2. Dice tomatoes, bell peppers & onions & set aside.
  3. Rinse & chop cilantro finely & set aside.
  4. Cook sausage in pan.
  5. Drain off excess oil.
  6. Set drained sausage and set aside. DO NOT wash the pan yet!
  7. Put sour cream in a small bowl with 2 Tbsp of Tapatio & 2 Tbsp of Cilantro.
  8. Stir & set aside.
  9. Use the same pan that sausage was cooked in and sauté tomato, bell peppers & onion for approx three minutes.
  10. Add the cooked sausage & uncooked rice.
  11. Next, add tomato sauce, Cajun spice 2 Tbsp Tapatio & vegetable broth.
  12. Once it starts to boil set on simmer & cover.
  13. NOTE: don’t let it dry out.
  14. Once the rice is cooked, it’s ready to eat! (Approx 10-15 mins)
  15. Scoop cooked meal into a bowl sprinkle cheese, a dollop of sour cream mixture & cilantro. (as desired)
  16. Enjoy!  It’s quite easy to “upsize” this recipe.
